A fiery celebration of blackened shrimp mingled with creamy sauce, cherry tomatoes, and spinach for a delightful pasta dish.

  • 8 oz pasta (linguine or fettuccine)
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp blackening seasoning
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup spinach
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Cook the pasta according to package instructions, until al dente. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium-high heat, letting it shimmer.
  3. Season the shrimp with blackening seasoning, then add to the skillet, cooking until pink and cooked through—about 2-3 minutes per side.
  4. Remove the shrimp and set aside.
  5. Add minced garlic to the skillet and sauté for about 1 minute, until fragrant.
  6. Add halved cherry tomatoes to the skillet, cooking until they soften and burst.
  7. Pour in the heavy cream and bring to a gentle simmer.
  8. Stir in the spinach, cooking until wilted.
  9. Return the cooked shrimp to the skillet and mix them into the sauce.
  10. Add the cooked pasta to the skillet and mix everything together.
  11. Season with salt and pepper to taste and serve hot, garnished with Parmesan cheese.

Notes

For added flavor, consider cooking the pasta in vegetable or chicken broth. Customize with additional veggies like bell peppers or zucchini.
