A simple yet mouthwatering one-pan meal that combines chicken with a creamy peanut ginger sauce, perfect for a quick weeknight dinner.

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • 1 tablespoon vegetable oil
  • 1/2 cup chicken broth
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • Salt and pepper to taste
  • Chopped peanuts and green onions for garnish

Instructions

  1. Prepare the Peanut Ginger Sauce by mixing peanut butter, soy sauce, ginger, garlic, honey, and chicken broth until well blended.
  2. Heat the vegetable oil in a large skillet over medium heat.
  3. Sauté the chicken pieces in the skillet until nicely browned.
  4. Add the sliced onion and bell pepper to the skillet, stirring until they soften.
  5. Combine the prepared peanut sauce over the chicken and vegetables, stirring to coat.
  6. Simmer for an additional 5-7 minutes, or until the chicken is cooked through.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped peanuts and green onions before serving.

Notes

Serve over jasmine rice, quinoa, or noodles. Leftovers can be stored in the refrigerator for up to 3 days.
