  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 can (14.5 ounces) diced tomatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Cook the chopped onion and minced garlic in a skillet until soft.
  4. Add the ground turkey to the skillet and cook until browned.
  5. Stir in the diced tomatoes, cooked rice, Italian seasoning, salt, and pepper.
  6. Spoon the savory turkey filling into each bell pepper until filled to the brim.
  7. Place the stuffed peppers in a baking dish and cover them with foil.
  8. Bake for 30 minutes.
  9. Remove the foil, sprinkle with cheese (if desired), and bake for an additional 10 minutes.
